The Epicurean Bistro & Wine Bar is a dining experience that mirrors that of the Pogue's dinner table; a nightly ritual that brings the family and friends together over food and wine to savour not only what is on the plate, but the personalities and stories sharing the experience, and the memories created that linger long after a bottle of Chateau Lafitte.
Claire Pogue Managing Partner | Beginning in her mother's kitchen outside of Montreal, Claire Pogue's culinary career has taken her from the kitchens of acclaimed New York City caterer Gracious Foods and Vail, Colorado's luxurious The Inn at Cordierra, to hospitality management for some of the most exclusive resorts in the world including the Inn at Beaver Creek. Claire's vision for The Epicurean, that began with the country cafe at Sterup Square in Pittstown seven years ago, is to nurture a community of people with discriminating tastes who take pleasure in the elements of French Dining.
Sandy A. G. Pogue Partner | A few years after opening the original Epicurean, Claire's marketing husband Sandy joined her in the pursuit of elevating the food and drink accessible in the Capital Region. Coupled with his tenure as co-owner of a Vail-based fine food & game meats distributor, Sandy Pogue's delight for sharing little-known gastronomic discoveries, is a driving force of both The Epicurean's Gourmet Shoppe selections, as well as the 1700-plus bottle wine cellar.
Dominique Brialy Executive Chef | Executive Chef Dominique Brialy's career has been singularly-focused on culinary exploration and excellence, from his first memories growing up on a farm in the rural Loire Valley to his studies at the well-respected Hôtellerie L’Arlequin in Montmelian. Chef Dominique learned from some of the most diverse and challenging chefs in Provence that helped to propel him to the role of Sous Chef at the Restaurant du Gourmet at The Paris Hilton. Chef Dominique's curiosity for American life eventually led him to the post of Executive Chef of the Saratoga Lake Bistro, where not only was he awarded the 2004 Iron Chef title, but he met kindred spirits, Claire and Sandy Pogue. Since joining The Epicurean in 2005, Chef Dominique has been awarded culinary distinctions from Chaine des Rotisseurs among others, and continues to put his unique spin on French classics with the intention of delighting, and at times confounding, his diners.
