Fall Harvest Venison with Dried Cherry Garnish

 

Ingredients ~ Serve 4

 

1 yellow pepper washed and sliced thinly

½ red or yellow apple washed & sliced thinly

3 oz. of dried cherries

¼ cup of pine nuts

2 garlic clove minced

1 Tbsp fresh minced parsley

¼-½ cup of rosé wine

Salt & Pepper to taste

1 lb venison cleaned & cut in

 

For the garnish…

 

*      Add a good quality olive oil & butter to a very hot pan

*      Sauté the yellow peppers for one minute, add the apples & sauté for 30 seconds

*      Add the dried cherries, pine nuts, garlic & parsley – stir & sauté for another 30 seconds

*      Deglaze with ¼ cup of wine and let simmer on low heat

*      Season to taste

 

      For the meat…

 

*      While making the garnish – set a second pan on high heat

*      Add olive oil and butter to the second hot pan

*      Quickly sear the venison – one minute on each side

*      Season to taste

*      Arrange the venison on 4 warm plates

*      Deglaze the pan with the remaining wine

*      Pour juices from this pan into the other pan with the garnish, stir &

      spoon the garnish on top of the venison
